Asian Stir Fry Chicken Thighs & Veggies



Last night's dinner was yummy! 
I love the simplicity of clean eating.
All you need is protein & veggies & dinner is done!
The marinade for the chicken 
is very easy. 
Chicken thighs taste best ;)
But, if you are trying to make a leaner version,
then chicken breast work as well.
*hint* I like to butterfly my chicken breast
when I marinade them.
It soaks the flavor up even more!
Not necessary with chicken thighs,
since they pretty much are already cut this way.
I served our Asian chicken with mixed veggies
(zucchini, bell pepper, snap peas & carrots).

Recipe:

6-8 boneless chicken thighs
1/2 cup coconut aminos
1 tblsp of fish sauce (makes all the difference, trust me)
1/2 cup water
1/4 cup honey
3-4 large cloves of garlic (diced)
1/2 cup green onions (diced)

Place chicken in large zip-lock bag in bowl.
Add all ingredients to the bag & massage the chicken.
Marinade in the fridge for 1-2 hours.
Cook in frying pan with a little olive oil.
Be careful to turn often,
so that the chicken doesn't burn,
because of the honey.
Enjoy!

Yesterday's Workout

7 thrusters

Paleo Chili & Spaghetti Squash

Forgot to post this one.
Here's an easy hearty dish!
I make mine leaner 
by omitting the bacon 
and adding 1 lb of ground turkey. 
I also double the seasonings ;)
Although, as a treat, the bacon makes it quite yummy!

I found this recipe on Pinterest. 
Lots of ideas there! 
If you're watching carbs, 
then you can leave the sweet potatoes
out & serve over squash. 
Still delicious!

I just cut my squash length wise,
scoop out the seeds & lay it face up on a cookie sheet.
Prick the flesh of the squash all over with a fork.
Drizzle a little olive oil over the top
& bake at 425 for 35-45 min.
Once a fork can easily pierce the flesh,
then the squash is done.
Shred with a fork & serve!

French Fire



























We are surrounded by two large wild fires in the area right now :/
And it doesn't look as though they will be contained soon.
Really missing my runs outside!
Even my regular CrossFit workouts
in the garage are having to wait.
It's just too smokey out there!
I did my first Inferno workout
from the Daily Burn site today.
Wow, it was NO joke!
My quads & hamstrings are on fire!
They boys are climbing the walls!
So I had them do a kid's CrossFit workout as well.

30 Burpees, 300 Jump Ropes, 3 Mile run






























Another good workout from the HIIT mamas blog!
Check them out, if you haven't already.
Great resource!
I did my three miles on the elliptical.
Not ideal, but because of nearby fires,
it has been too smokey to workout outside :/
Let's hope they get a handle on these fires soon!

Cilantro Lime Cauli Rice

Cauli rice is a very common request!
And rightly so, it's very simple & delicious!
It's a perfect side dish for chicken & fish.
This cauli rice is a mimic of Chipotle's lime rice.
Only this is the paleo version ;)
No guilt!

Directions:

1) Give your cauliflower a rough chop.

2) Pulse in food processor, HALF a head at a time. Doesn't take long to get the rice consistency.

3) Heat up some olive oil (1-2 Tblsp) in frying pan.


4) Add cauli rice & cook for just a couple of minutes until tender. Stir in a little chicken bouillon to taste. Not too much, you don't want to overpower the flavor of lime & cilantro. Then add the juice of one lime and a handful of chopped fresh cilantro. Enjoy!

Feels good!
Weighed myself & took measurements too.
Down 2 lbs in a week!
Right on track. Yay!
Now on to fight kid boredom :/
Boys are getting antsy as the summer days pass.
I'm sure we'll be pool bound this afternoon.
